I’m gonna say that this is the perfect food for a cold evening. Warm, comforting and filling.
- 2 cups cooked lentils + broth they were cooked in
- 1 lb. ground turkey
- 1 can tomatoes
- 1/2 onion, chopped
- 2 cloves garlic
- dried thyme leaves
Add the evoo to the pot over medium heat. Add the onion and cook until translucent. Then add the garlic for another minute or so. Next, add and brown the turkey, breaking it up with a spoon. When turkey is all browned, add the can of tomatoes, lentils and broth. I like things to have a definite “spice” so I add about a palmful of both thyme and cumin. Then add salt and pepper to taste. Top with hummus (or plain yogurt would be good) and serve. It warms your belly and tastes fantastic! Serves 4.
