Ingredients:
- One prepared pizza crust
- 1 t olive oil
- 3 green onions, sliced
- 1 red pepper, sliced
- 1/2 cup basil pesto (see below)
- 4 roma tomatoes sliced
- 2 cups spinach
- 2 t lemon juice
- 1/2 cup parmesan cheese
For pesto:
- 1/2 cup basil leaves
- 1/3 cup pine nus
- 2 garlic cloves
- 1/4 cup olive oil
- 1 t lemon juice
- salt to taste
Combine basil, pine nuts, garlic and lemon juice in a food processor. Stream in the olive oil and lemon juice with the food processor running. Add salt to taste.
Pizza Instructions:
Preheat oven to 425 degrees and prepare the pizza crust by pre-cooking for 5 minutes.
In a skillet, add the olive oil and cook the peppers and onions on med-high heat until tender. Then add the spinach until wilted. Add the 2 teaspoons of lemon juice. Spread the prepared pesto on the pizza crust (just pre-cooked for 5 minutes), add the veggies, sliced tomatoes, and parmesan cheese. Bake 10 -15 minutes at 425 degrees.
