Pantry Clean Out

Ingredients:

  • 2 cups of rice, cooked and cooled
  • 1 cup orzo pasta
  • 2 heads of broccoli, chopped and sauteed
  • 2 carrots, chopped and sauteed
  • 1 yellow squash, sliced and sauteed
  • 2 ears of corn, cut from cob
  • 2 ribs of celery, chopped
  • 1 /2 onion, grilled (or sauteed would work, too)
  • 2 cups of green beans

Combine all ingredients, and serve at room temperature or chilled – dressed with the following…

Dressing:

  • 1/4 cup evoo
  • 1/2 cup red wine vinegar
  • 1 tbs. garlic powder
  • 1 tbs. dried, minced onions
  • 1 tbs. dried mustard
  • 1 tbs. sesame seeds
  • salt and pepper
