This recipe was given to my by one of my mom’s friends when I got married – it’s easy, and semi-healthy for a cake.
Mix and set aside:
3 cup flour
1/2 tsp. baking soda
1 tsp baking powder
In a separate bowl (or electric mixer) beat:
3 eggs
1 3/4 cup sugar
1/2 c. canola oil
Add:
5 cups of goodies (apples, dried fruit, nuts, chocolate chips, etc.)
Then add the flour mixture to the egg/goodie mixture, pour into a greased bundt pan and bake at 350* for 45 – 60 minutes.
The mixture will be very thick and dense – not to worry, it will resemble cake when it’s baked!

I just made this and it tastes AWESOME but it completely fell apart coming out of the bundt pan and now it looks a total mess on the counter. I want to make it again (um, not right now) but how do you think i can avoid that problem. Maybe I didn’t use enough Pam? Maybe I tried to flip it too soon (it was probably out of the oven 20 mins or so)? Something else?
Seriously, it is soooooooooooooooooooooo delicious! I added granny smiths, oats, flax seeds, and choc chips. YUM! Calling it BREAKFAST CAKE CRUMBLE when I serve it tomorrow morning!
Yay! Glad you liked it! I would suggest maybe greasing AND flouring your cake pan. That always prevents sticking if I’m having an issue (which I do A LOT). Good luck!
