Gluten-Free Vegan Pancakes

Ingredients

  • 1 1/2 cups gluten free all-purpose flour (I use Bob’s)
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground nutmeg
  • 2 tbs. chia seeds
  • 6 tbs. water
  • 1 1/4 cups soy milk
  • 1/2 teaspoon vanilla
  • 3 tablespoons butter substitute (I use Earth Balance), melted

Directions

  1. First, add the chia seeds to the 6 tbs. water and let set until they turn into a gel (this will be your “egg”)
  2. Combine flour, sugar, baking powder, salt and nutmeg – set aside
  3. In a separate bowl, combine milk, vanilla, melted butter, and the chia “egg”
  4. Add the wet to the dry and stir until just combined
  5. Pour the batter onto a hot griddle/pan by ¼ cup, let cook for 1-2 minutes and flip.

**These cook quickly so be careful to watch them**
