Calm(ish) Monday

I had 5 kiddos absent today. It’s amazing what a difference 5 kids can make in a classroom of 24…it was a nice, quiet(ish) start to the week.

Before work, there was some exercise, and some oatmeal.

½ cup oats, 1 cup water, 1 tbs. chia seeds, cinnamon, earth balance butter – a fairly plain bowl, but tasty.

Snack was an apple and some almonds.

Lunch


I made these spring rolls for Meeker’s birthday this weekend, and had leftovers for lunch today.

I dipped them in a peanut butter + soy sauce combo

Delicious. Especially paired with some fruit.

When I came home, I had a slice of cake for snack.

Then I started making French onion soup for dinner. While it was simmering, Meeker and I walked up to our neighborhood high school to watch my kiddos in a track meet. They were adorable…waving and smiling at me in the middle of running the 400m and 800m. I love them.

When I got back, dinner was done!

Are you ready for the easiest recipe ever? It took literally 3 minutes of prep.

  • ½ large onion (about 7 oz), sliced thinly
  • 1 can beef broth
  • 1 tsp. worchestire sauce
  • 2 tbs. cheese (I used mozzarella)

Combine the onions and the broth and simmer on low for about an hour. Then stir in the worchestire sauce, top with the cheese and eat.

In the 3rd grade world…

The parents in my class threw me a baby shower last Friday. It was such a blast.

There were cupcakes…


A diaper cake…


Diaper changing relays…(just about the funniest thing you’ve ever seen)


Estimation games…(somewhat educational)


And a miniature pacifier scavenger hunt.


It turns out that baby showers can be fun for 9 year olds and pregnant teachers.

  3. That shower looked like TONS of fun! As long as you didn’t have to “guess the candy in the poopy diaper”–I hate that dumb game.

    Dude, I love French onion soup.. what a simple recipe. Noted. Also, i went to Thai food last week and had spring rolls that looked identical to yours! I need to try making them at home! Love the peanut butter+soy sauce dipping sauce idea.

    How nice was it for the parents to throw you a baby shower? What a sweet thing to do. I think that says a lot about what kind of teacher you are, they obviously love you. 🙂

  6. I’m so jealous of your calm-ish Monday! I’m just waiting for a calm-ish day myself, lately it’s seemed like everything has just been go-go-go.

    I want to eat a piece of Meeker’s cake right now (and it’s 9am) so that says something about how yummy it looks…or just about how much I like cake. Haha 🙂

    That baby shower cake doesn’t look so bad either! What a nice treat for you for them to throw you that shower – you’ve got nice parents at that school!

    • Eek, I don’t think so!! I’ll have to go back and check what I said…I was pretty sleepy this morning, maybe I was sleep commenting? Either way…baby cakes is still tucked nicely inside my body. No baby yet. 🙂
